Whether you’re fresh out of wine or simply don’t want to use it, then this shrimp scampi recipe without wine is for you!

In this mouthwatering shrimp scampi recipe without wine, plump shrimp are simmered in olive oil, butter, lemon, garlic, and fresh herbs for this classic seafood dish. Baked in the oven, this divine, wine-free shrimp scampi recipe takes only minutes to make!

What makes this version stand out is its clean, vibrant flavor—no wine needed to deliver the brightness and depth you expect from scampi. Instead, the combination of citrusy lemon juice, rich butter, and good olive oil creates a luscious sauce that coats the shrimp perfectly. The addition of panko bread crumbs elevates the dish with a creamy rich texture. The oven-baking method ensures the shrimp are cooked just right—tender and juicy with just a touch of caramelization around the edges.

This dish is incredibly versatile, too. Spoon the shrimp and sauce over linguine, angel hair, or zucchini noodles for a comforting, satisfying meal. Serve it with crusty bread to mop up the garlicky lemon-butter sauce or pair it with a crisp salad for a light, fresh dinner. It also works beautifully as an appetizer—simply serve in a shallow dish with toothpicks and lemon wedges.

Best of all, this wine-free version is weeknight-friendly, coming together in less than 30 minutes from start to finish. It’s a classic reimagined—easy, elegant, and full of zest.
